Sunday weigh in

Nothing big to report this week… No weight loss but no weight gain either…. Things have been bad once again with my medications so that’s why I’ve been MIA… Ill be sure to update you all soon…

I hope everyone is doing well and looking forward to spring… I can’t wait to get back on my feet for good… No one has been more frustrated with this medical mess up than me… Much love!

Peanut Butter STUFFED Chocolate Chip Cookies

you heard that right…

I may be avoiding the kitchen today but last night during the little snow storm I totally attempted these cookies which are the biggest sugar rush ever!

First I whipped up some super quick peanut butter balls or “buckeyes” without the chocolate coating…. just peanut butter, vanilla, butter and powdered sugar…

then these babies needed to be chilled for a bit so they wouldn’t be total mush…

they should be nice and firm when done…

feel free to eat a few in the mean time

Then just good old fashioned chocolate chip cookie dough batter off the back of the nestle toll house bag…

I add a little baking powder to my dough too but these still aren’t the cookies my dad used to make… one day I’ll get it…

The key is to make a sandwich with cookie dough, peanut butter ball, and cookie dough…

completely cover the peanut butter with the cookie dough… these puppies will be BIG…

pop in the oven for 13-14 minutes and enjoy the massive magic!

And then great grandmothers cookie sheets failed me, which I mean, what can you expect from cookie sheets that are 60+ years old

The sheet was bent and I didn’t notice so I had some squarish cookies but just as good…

These are yummy but I warn you they will put you in a sugar coma especially when you hit that peanut butter center!

No real recipe secrets here.

1. make peanut butter balls

2. make chocolate chip cookie dough

3. make sure everything is refridgerated (THIS IS KEY!)

4. sandwich the peanut butter ball between the cookie dough and bake for 13-14 minutes…

5. pour a glass of milk and enter sugar heaven

Snow Day

So Pittsburgh was supposed to get 2-4 inches of snow yesterday…. we ended up with 8-9 inches…

Of course none of the road crews were ready for it… cars were stranded all over Pittsburgh last night… Thankfully I was home from1pm on yesterday and Steve stayed at his parents… but by this morning roads still weren’t clear and it became a self declared snow day…

45 minutes of shoveling was my workout this morning… yes 45 minutes…

I should be doing some cooking for the week but I’m a bit nervous about my first residency interview tomorrow… and so I’ve been cleaning and doing school work to get my mind off of it… I know if I start cooking I’ll eat my nerves away… and that is no beuno…

Sunday Weigh In

So last Monday I climbed on the scale out of pure curiosity since I had decided not to post a weigh in on Sunday… And oh my lord it told me I was 250.  I wanted to cry…

I knew that I had to do something… Though I certainly wasn’t perfect this week I took the dog for a few long walks, got on the treadmill a few times and even did a little kickboxing sesh at home…

I had a green monster for breakfast every day tried to watch intake for lunch and dinner and although I ate out the last two days for dinner the scale showed some results this morning!

in 6 days I was back down to 245… and now just keep it up… though once again my schedule goes insane this week… so we’ll see how I keep it up this week… especially now that the weather is going to get cold again…
