I want to go back

We left the lake on Monday morning, now its Tuesday and I already want to go back… It’s about an hr and a half drive away, which is completely manageable, especially for a view out the front door like this…

what a sight to wake up to

The water was really high with all of the rain so sadly the lower dock was pretty much in the lake this weekend but the water should recede a bit soon..

Steve’s brother and his friends came up for a night and they gave me a chance to fiddle with the color settings on my camera…

We took the boat out…

And I read most of this book while sitting in the sun (covered in spf 50 for once! – no sun burn here!!)

fantastic book! can't wait to read more by him...

Not pictured are the pink and blue adirondacks I bought to relax in… love em!…

I love this little get away…

Will be back in a couple of weeks… wish I could spend like a month there…

On another note… I’ll be participating in Liz’s 30 day challenge at One Twenty Five

I’m not a runner by any means… but I need a push to get moving… So I order some new tennis shoes and tomorrow the gym will meet someone who is determined to kick some BUTT!

Happy Memorial Day Weekend!!!

Hey everyone! First off, big thank you to all of the troops who have served this country… my gratitude for you is enormous… I’l especially be thinking about both my grandfathers who fought during WWII and my dad who served in peacetime Korea in the 70′s…

I hope everyone has some plans lined up and has a great weather forcast… it should be 85 and sunny here this weekend… bring on the tan… HA more like bring on the lobster skin…

I’ll be heading to the lake with Steve and his family for the weekend and looking forward to it like nothing else… :)

To refresh my memory and yours… here’s where I’ll be spending the next few days…

cant wait!!!

and i’ll be without a cast on my hand this time… if you recall the one time we made it up last summer I had just had carpel tunnel surgery and was in killer pain most of the time…

But this year, for the first time in 6 years I will have EVERY weekend off and I plan to spend the majority of them at the lake…

Minnie will be staying home for this trip, mom is dogsitting reluctantly but hopefully Miss Minnie can make some of the over night trips with us… I want to see her swim lol…

shrimp and sipping chocolate

sounds delish doesn’t it??? don’t worry one was dinner last night and one was dessert and I took an hr break in between…

Steve wasn’t planning to be home from his job (the tree service) until 8 so I decided not to wait for him to make dinner…

I cooked up some of this…

This was soooo good and didn’t have any additives to it, I liked it better than regular pasta AND whole grain pasta… must buy more…

I sauted some shrimp to top off the pasta and cooked up some TJ’s marina sauce with some extra basil popped in there while heating up…

Then topped it off with some fresh shredded Parmesan and havarti cheese for some spice… my new obsession is havarti cheese on pasta… gives it a great kick…

And then behaving myself I portioned out steve’s dinner and put it aside for him to heat up later and portioned out the leftovers for quick heat up meals… :)

An hr later…. this happened…

I think my mom got me this a few years ago and I forgot about it in my cabinets… it is so rich and tastes like you’re drinking chocolate cake batter… SCORE!

I heated up some soy milk and popped it in…

The mix is 90 calories which isn’t too bad for a nice big cup of hot sipping cocoa

And of course I used my favorite oversized mug that Ashley gave her bridesmaids when she got married…

Remember that breakfast burrito that I said I was going to tweak??? I did… and it was fab…

Same egg, tortilla, turkey bacon and the tomato basil laughing cow cheese… but with……….

wait for it……

FRESH SALSA!!

Am I the only one who would hands down take fresh salsa over the jarred stuff, like ortega, any day of the week??? I LOVE fresh salsa… I purposefully didn’t buy and tortilla chips because I knew the salsa would be gone in a matter of days and I actually want to use it for meals…

Once again this held me over from 6am until noon which was fantastic since I was in and out of meetings all morning yesterday…

Lunch was another salad with, you guessed it, fresh sallllsa, yummo!

I also bought a side of cheesy veggies at work as a side dish… the cheese, probably not so healthy… the veggies which included broccoli, cauliflower, carrots and a couple little tater tots weren’t too bad at all….

There are no pictures of meals or snack from my lunches actually at lunch because there are no photos permitted where I work…. so all pics are of foods pre-prepared… (totally made up that work i think)

I also packed some organic apple sauce and added some cinnamon… It didn’t even come close to my grandmother’s apple sauce… the woman used to put her apple sauce in a food processor/blender and was soooooo smooth… she spoiled all of us grandkids when it comes to apple sauce now… lol…

What is your favorite way to enjoy apple sauce? plain? mixed with something else? chunky? smooth?
